Peppercorn berries are picked at the peak of their ripeness from peppercorn plants grown in Penja Valley in Cameroon. The peppercorn plants are grown in Penja Valley in Cameroon. The plants are naturally enriched with nutrients from the volcanic soil of Penja. Once harvested they are then sorted and washed by hand after being bathed in freshwater for a period of 7-10 days. The outer layer of the berry is removed, and the pepper is sun dried. Penja pepper has specifically become popular amongst Michelin-star chefs for its signature taste. White Penja pepper is less hot than its Black counterpart which makes it perfect for dishes needing only a hint of flavour.
